Slow Cooker Beef Stroganoff is a hearty and delcious recipe. It is also a diabetic-friendly and Weight Watchers (8) PointsPlus, (9 SmartPoints) recipe. Delicious, hearty and healthy with a good source of Potassium at 631mg per serving. Makes 6 Servings. Slow Cooker Beef Stroganoff will be loved by your family, friends and guests.
1-1/2 lbs beef stew meat
2 tsp vegetable oil
2 cups sliced fresh mushrooms
1/2 cup chopped onions
2 garlic cloves minced
1/2 tsp dried oregano leaves, crushed
1/2 tsp salt
1/4 tsp dried thyme, crushed
1/2 tsp ground black pepper
1 bay leaf
1 (14-1/2 oz) can low-sodium beef broth
1/3 cup dry sherry or low-sodium beef broth
1 (8 oz) carton light sour cream
2 tbsp cornstarch
2 cups hot cooked noodles, cooked seperately
Snipped fresh parsley (optional)
1. Cut beef into 1-inch pieces ( if needed). In a large skillet cook beef, half at a time, in hot oil over medium heat until brown. Drain off fat.
2. In a 3 1/2- or 4 quart slow cooker place mushrooms, onion, garlic, oregano, salt, thyme, pepper and bay leaf. Add beef. Pour broth and sherry if using, over all in slow cooker.
3. Cover and cook on LOW 8 to 10 hours or HIGH 4 to 5 hours. Remove and discard bay leaf. Cook Noodles seperately according to package directions.
4. If using LOW setting, turn to HIGH. In a medium size bowl combine sour cream and cornstarch. Gradually whisk about 1 cup of the hot cooking liquid into sour cream mixture. Stir sour cream mixture into slow cooker. Cover and cook about 30 minutes more or until thickened. Serve over hot cooked noodles. If desired, sprinkle each serving with parsley.
