Prep Time: 20 Minutes.
Cooking Time: 40 Minutes.

INGREDIENTS:

1 (10 oz) box frozen chopped spinach, thawed, well drained
1 (16 oz) carton fat free cottage cheese
1 red bell pepper, chopped
1 egg white
1 (0.7 oz) envelope Italian salad dressing mix
1 cup shredded Mozzarella cheese, divided
20 jumbo pasta shells (for stuffing), cooked, cooled
1 (14 oz) jar spaghetti sauce

Directions:

1. Preheat oven to 400° F.

2. Combine together the first 5 ingredients. Stir in 1/2 cup Mozzarella; spoon into shells.

3. Spread half of the spaghetti sauce onto bottom of a 13 x 9 inch baking dish. Place shells in dish; top with remaining sauce and mozzarella. Cover and bake 30 minutes or until heated through; uncover and bake another 10 minutes.

Healthy Note: (Save 380mg sodium per serving by preparing with reduced-sodium low-fat cottage cheese & low-sodium spaghetti sauce).

Yield: 5 Servings

INGREDIENTS:

4 slices bacon, chopped
1 onion, chopped
1 red bell pepper, chopped
1 (30 oz) bag frozen shredded hash browns, thawed
1 (10.75 oz) can reduced-fat reduced-sodium condensed cream of mushroom soup
1 cup light sour cream
1-1/4 cups 2% shredded Colby/Jack cheese

Directions:

1. Preheat oven to 375º F.

2. Cook bacon, onions and peppers in a large skillet over medium-high heat for 5 minutes or just until bacon is crisp, stirring occasionally. Transfer to a large bowl.

3. Add in hash browns, soup, sour cream and 1 cup of the cheese; mix lightly. Spoon into a 13 x 9 inch baking dish; top with remaining cheese. Bake 40 to 45 minutes or until heated through.

NOTE: (Frozen hash browns come in 2 shapes – small cubes which are called Southern hash browns, and shredded which are called country-style hash browns).

1/2 lb ground beef
1 onion, chopped
2 tbsp flour

3/4 lb (12 oz) Velveeta®, cut into 1/2-inch cubes
4 tsp sweet pickle relish
40 unsalted tops saltine crackers

Directions:

1. Brown meat with onions in a large saucepan; drain.

2. Stir in flour; cook and stir 2 minutes Add broth in and tomatoes; cook over medium-low heat 5 minutes or until heated through. Stir in Velveeta; cook and stir 8 to 10 minutes or until Velveeta is completely melted and soup is heated through.

3. Spoon into soup bowls; top with relish. Serve with crackers.

Ingredients:slow-cooker-beef-pot-roast

1 (2-1/2 to 3 lb) boneless chuck or rump roast, well-trimmed
5 cups cut-up fresh vegetables, such as carrots, celery, onions & potatoes
1 pkg slow cooker pot roast seasoning mix
1 cup water

Directions:

1. Place beef and vegetables in slow cooker.

2. Mix Seasoning Mix and water until blended. Pour over beef and vegetables.

3. Cook 8 hours on LOW or 4 hours on HIGH. Remove roast and vegetables to serving platter. Stir sauce before serving and ladle over meat and vegetables.
